特其拉酒（Tequila)-产于墨西哥，它的生产原料是一种叫做龙舌兰（不是芦荟）的珍贵植物，其实它属于仙人掌类，是一种怕寒 特其拉酒的多肉花科植物，经过10年的栽培方能酿酒。
特其拉酒在制法上也不同于其它蒸馏酒，在龙舌兰长满叶子的根部，经过10年的栽培后，会形成大菠萝状茎块，将叶子全部切除，将含有甘甜汁液的茎块切割后放入专用糖化锅内煮大约12小时，待糖化过程完成之后，将其榨汁注入发酵罐中，加入酵母和上次的部分发酵汁。有时，为了补充糖分，还得加入适量的糖。发酵结束后，发酵汁除留下一部分做下一次发酵的配料之外，其余的在单式蒸馏器中蒸馏两次。第1次蒸馏后，将会获得一种酒精含量约25%的液体；而第2 次蒸馏，在经过去除首馏和尾馏的工序之，将会获得一种酒精含量大约为55%的可直接饮用烈性酒。虽然是经过了两次蒸馏，但最后获得的酒液，其酒精含量仍然比较低，因此，其中就含有很多原材料及发酵过程中所具备的许多成分，这些成分就使特其拉风味在特其拉酒中发挥得淋漓尽致。和伏特加酒一样，特其拉酒在完成了蒸馏工序之后，酒液要经过活性炭过滤以除去发票质。至此，特其拉酒的定义已一目了然。
特其拉酒的酒精含量大多在35%--55%之间。我们通常能够见到无色特其拉酒为非陈年特其拉酒。金黄色特其拉酒为短期陈酿，而在木桶中陈年1--15年的，称为老特其拉酒。

特基拉一共有几种酒

2如果是问特基拉的分类就有四个种类了：
白色龙舌兰，金色龙舌兰、香醇龙舌兰以及陈年龙舌兰
*白色的是蒸馏即饮的初级品，味道较辛辣，有刺激性，有点特殊的是，比较起一般酒类产品的陈年标准都是规定存放的时间下限，这个等级的龙舌兰规定的却是上限，最多不可超过30日。
*金色龙舌兰跟白色龙舌兰其实可以是一样的东西，只不过金色的版本有加上局部的调色与调味料这个类型的酒经过一定时间的橡木桶陈放，只是还放不到满一年的程度。木桶里的存放通常会让龙舌兰酒的口味变得比较浓厚、复杂一点，因为酒会吸收部份橡木桶的风味或甚至颜色，时间越长颜色越深。陈放时间介于两个月到一年之间，目前此等级的酒占墨西哥本土特基拉酒销售的最大宗，占有率达全部的六成水准。
*香醇龙舌兰简单来说，就是橡木桶陈放的时间超过一年以上的酒，都属于此等级，没有上限。不过有别于之前三种等级，
*陈年龙舌兰酒受到政府的管制可是严格许多，它们必须使用容量不超过350升的橡木桶封存，由政府官员上封条，虽然规定上只要超过一年的都可称为 Añejo，但有少数非常稀有的高价产品。除了少数陈年有八到十年的特殊酒款外，大部分的Añejo都是在陈年时间满了后，直接移到无陈年效用的不锈钢桶中保存等待装瓶。
